This flour is very easy to process and it gives a soft and airy dough. The ideal rising time for this flour is about 2 to 8 hours at room temperature

This flour is suitable for making pizza dough, bread dough, pie dough and also dough for many Italian sweets. Handy to have in stock for many applications. This flower in the blue suit is mainly used for recipes with somewhat shorter (1 to 2 hours) to average rising times (about 2 to 8 hours).

If you plan on just baking pizza, try the red 00 flour packet Molino Caputo. You use the flour in the red pack if you let your dough rise for more than 8 hours. Or when you use the cooling technique and let your dough rest and ripen in the refrigerator for 24 to 48 hours.
